HACCP is the Hazard Analysis and Critical Control Point program and is currently the best tool to achieve safety in our products. The HACCP program is published in the Codex Alimentarius and is within the food safety management system according to ISO 22000. It is based on 7 principles with 12 steps where actions are established to identify and control hazards within processes.
